Chocolate Chip Cookie Bites

On Mondays, I go to a Bible study at my church. Every week the people from one of the tables are responsible for bringing treats for everyone. You know how this works. You get up to the treat table, and you think, “Oh that looks good!” so you take one and then you move on to the next item and think the same thing. By the end of the line, you have run out of space on your plate to put all the tasty treats. This week I brought bite-size chocolate chip cookies. I figured that if I made the cookie very small, there would be more opportunity for people to try my dessert and lots of others. But beware, they are dangerous when baking and eating because you just keep saying to yourself, “Just one more…they’re small!” Next thing you know, you have made quite a dent in the batch. But fear not, each cookie only costs $0.02, so you can afford to pop a few more.

Ingredients
1 1/3 cup all-purpose flour
1 tsp cornstarch
¼ tsp baking soda, rounded
¼ tsp salt
½ cup butter, melted
½ cup brown sugar, packed
¼ cup granulated sugar
1 egg
1 ½ tsp vanilla extract
3/4 cup mini chocolate chips




Instructions
1. Mix flour, cornstarch, baking soda, and salt in a small bowl. Set aside.
2. On medium speed, combine butter, sugar, brown sugar, and vanilla in a stand mixer. Once creamy, add the egg.
3. On low speed, slowly add the flour mixture until fully absorbed.
4. Stir in the mini chocolate chips.
5.  Place ½ tsp rounded pieces of dough onto a baking sheet about 1 inch apart.
6.  Bake for 5-6 minutes at 350F. Take them out when slightly underdone, as they will continue to bake while they cool. Place on a wire rack or paper bag to cool completely before storing in an airtight container.



Notes
  • This recipe yields about 8 dozen cookies (depending on how much dough you eat).
  • I increased the amount of mini chocolate chips from 2/3 cup to 3/4 cup. This used exactly half of the bag I had. Plus, who doesn't want more chocolate?
